Bacon Wrapped Scallops!

Well, I mentioned that my cousins were in town…

And since I decided to live their vacation with them, it was a week of incredible adventures and tasty noms. We ate out at a few signature Steamboat restaurants and we cooked some fabulous meals! I think my favorite night was our first. We visited the farmers market and got the Papardelle’s pasta I mentioned in my last post. After some debate, we decided to make the Basil Shells, with tomato sauce, which I threw a mass amount of veggies into. Steve and I then decided it was a bacon wrapped scallop kind of evening as well…so we made some of those as hors d’oeuvres! So incredibly great. And easyyy!

Bacon Wrapped Scallops:

10-12 large wild caught scallops

10-12 pieces of bacon

1/8 tsp salt

1/2 tsp black pepper

1/2  tsp cayenne pepper

1/2 tsp garlic powder

squeeze of lemon

***4-6 bamboo skewers soaked for 30min in water

Directions: Preheat oven to 350 and bake bacon for 10-12 minutes until it is beginning to get golden and the strips are still pliable. Remove from oven and set aside to cool. Toss scallops in spice mixture. Wrap a piece of bacon around a scallop and spear with the skewer, repeat until you have used all of the scallops with 3-4 on each skewer. Squeeze a lemon over them and toss them in the oven for 15-20minutes. Voila!

Oh man. Soooo easy, and soooo tasty! I highly recommend this recipe if you want to impress some people…or just stuff your face with amazingness. Also, feel free to double, triple or even quadruple the recipe! Thank god for bacon. A simple way to anyone’s heart. Scallop onward, my friends.
