Pumpkin Bread!

Hiking before the first snow, enjoying the remains of fall and getting pumped for ski season. All things that I did last weekend. After a lazy, football Sunday morning. Jeanne and I hiked up Mad Creek on Sunday afternoon and then watched the premier of a back country ski movie at the Steamboat Smokehouse. We started our hike a bit late, so the hike down and the ride home was in one of the best sunsets. Incredible.

The ski movie was great, and of course now the wait for the mountain to open is unbearable. Especially because I am looking forward to using my new skins to hike up in the early morning on a regular basis. Come. On. Snow.!

Also, there was pumpkin bread.

After Amber and I carved our pumpkins, I baked the carved bits and came out with about 2 cups of puree. SO I made some bread!

Pumpkin Bread:

2 cups pumpkin puree

1 3/4 cup brown sugar

1/4 stick butter

1 egg

2Tbsp milk

1 1/4-2 cups flour

1Tbsp baking powder

1 tsp cinnamon

1/4 tsp salt

1/4 tsp nutmeg

Directions: Preheat oven to 350F. Mix puree, butter, sugar and egg well in a medium bowl. Add milk, flour, baking powder and spices. Stir until incorporated. Pour into a greased 9×5″ loaf pan and bake for 35-40min.

Yum! There is just something about buttering up a warm slice of pumpkin bread on a fall morning that makes the day.
