Veggie Noodle Soup AND More Snow!

Snow! Finally. And we can only say finally because after last year the entire town (and probably most of the mountain towns in the Northwest) has been holding its breath hoping that we aren’t going to have a repeat. We still aren’t in the clear, but with about 20″ accumulated in the last four days, we are definitely excited! More lifts are opening and the added terrain is definitely a huge plus compared to the meager four runs we have been skiing for the last three weeks!

Anyways, with the snow comes my hibernation-mode. Or, the giant urge to curl up by the fire with a warm drink and a big bowl of soup. The best, right? Except skiing in it, of course! So, having been on grocery store strike for the last few weeks (due to my bank account recently declaring its very own strike on my wallet), I hit up the produce section for some cheap veggies and scrounged in the pantry for some dry goods to add. Hence, Veggie Noodle Soup! The Chicken broth I used is actually remains from the chicken I cooked a few months ago. I decided to rescue it from my freezer. Then, I just tossed everything together to see what would happen! Since it was soup…it couldn’t really end badly. And here we are~IMG_7252

Veggie Noodle Soup:

2 Tbsp Olive Oil

5-6 large carrots

4 stalks celery

1 onion

2 zucchini

2 tsp basil

2 tsp parsley

1 tsp pepper

1 tsp garlic powder

8 cups veggie or chicken broth

approx 2 cups dry noodles

Directions: Finely chop veggies. In a large pot, heat olive oil over medium heat. Add veggies and spices. Stir and cover. Let veggies cook until the they start to soften- about 10min- while stirring occasionally. Add broth and bring to a boil. Turn heat to medium low and simmer for 20-30min. Add pasta 12 minutes before serving. Mmm!IMG_7246

Yummer. AND A great dose of veggies as we approach flu season. AND its warm. Best enjoyed by the fire. I served it with Pillsbury Cresent Rolls..which are totally yummy and which I often forget about when shopping. But not this time! This time it was a well spent $1.79.
